Curry Chicken Salad

Ingredients

Protein
2-3 Chicken Breasts : boneless + skinless

Carbs
¼ c. Green Onion : sliced
½ c. Celery : chopped
½ c. Mango : cubed
¼ c. Cilantro : chopped
3 Lemons : squeezed
1 Tbsp Dijon Mustard : optional

Fats
½ c. Primal Kitchen Avocado Oil Mayo

Spice
3 Tbsp Curry Powder
1 Jalapeño : chopped - optional

Directions

- Bring a pot of water to a boil over the stove.
- Add your chicken breast and boil for 10-12 minutes.
- While the chicken is cooking, chop up all your ingredients.
- Once the chicken is cooked, let cool and dice into 1 inch cubes.
- The rest is simple: You’ll add all the ingredients together into a bowl and mix them all up!
- Salt + Pepper to your liking.
