matcha chia pudding recipe

I’ve recently rediscovered chia pudding and have LOVED having it as an on-hand snack in my fridge. chia seeds are a great source of fiber and I’ve been adding protein powder and collagen for a little protein boost too! and if you’re a matcha lover, this is right up your alley—added matcha (2 servings because this is two servings worth of chia pudding) and it is such a nice top. bonus that you get to add whatever toppings you fancy! so simply and great for breakfast, an afternoon snack, or a quick grab-and-go situation!

INGREDIENTS

  • 1/4 c. chia seeds

  • ~1.5 c. coconut milk

  • 1 scoop vanilla protein powder

  • 1 scoop collagen powder

  • 2 tsp matcha powder

    • mixed with ~1/3 c. warm water

  • 1 tsp vanilla extract

  • 1 tbsp maple syrup

toppings

  • strawberries

  • blueberries

  • granola

  • whatever else you’d like! coconut, nuts, seeds, etc!

INSTRUCTIONS

start by adding your chia seeds and preferred milk into your jar (one with a tight seal!), mix together until completely combined. add in your protein and collagen powders, again, mix well until completely combined—we don’t want any clumps!

place your matcha powder into a bowl and warm up some water (not hot, just warm, otherwise we’ll burn the matcha), then add the warmed water into the matcha bowl. whisk to combine—you can use a traditional matcha whisk, an electric whisk or a classic whisk here, whatever you have on hand!

add your matcha water into your chia seed mix and stir until combined. add your vanilla extract and maple syrup and give it one final stir.

place your mixture into the fridge and let sit for at least 2 hours; we typically let it sit overnight.

once you’re ready to dig in, get our your favorite toppings—this time we used blueberries, strawberries, and granola! but go for whatever you like best! top your matcha chia pudding with your favorites and enjoy!
