saucy gingery ground beef with mint

wow! this was one of those ‘use whatever I have and hope it turns out good’ creations and WOW. it turned out sooooo good I’m already planning on when I can make it next. it’s saucy, it’s gingery, it’s oh so delicious. highly recommend serving over a bed of greens + grains (my personal fav).

INGREDIENTS

  • 1lb force of nature ground beef ancestral blend

  • 1 tbsp ginger (I use this minced ginger from Whole Foods)

  • 1 tbsp garlic : minced or pressed

  • 1/4 white onion : finely diced

  • 1/4 c. rice vinegar

  • 1/4 c. soy sauce

  • 2 tbsp chili garlic sauce (can sub sriracha)

  • 1 tbsp fish sauce

  • 1 tbsp olive oil

  • 1/4 c. mint : chopped

  • salt : to taste

INSTRUCTIONS

if you’re planning on making your own rice with this, I suggest starting that process first. if you need to wash and dry your lettuce, do that now as well.

if you’re not using minced ginger from the store, peel your ginger and grate that into a bowl. same with the garlic, if you are not using pre-minced garlic, press or mince it now. combine in the same bowl as the ginger.

next, finely dice the onion. set aside in a bowl. add in your rice vinegar, soy sauce, chili garlic sauce, and fish sauce. stir to combine.

heat a large pan over high high-heat for 2 minutes. add your oil and allow the oil to coat the bottom of the pan. add in your ground beef, season with some salt, then use a wooden spoon or meat smasher tool to break up the meat into smaller pieces. you’ll allow this to cook undisturbed until the you notice that the underside of the meat is browned and the topside of the beef looks juicy, ~5 minutes.

add in your ginger and garlic, stir to combine, and let cook until the the beef starts to crisp, ~2min.

add in your rice vinegar mixture and cook for ~3min or until the sauce has reduced to a light glaze.

once the sauce is a light glaze, remove from heat and toss in the mint.

serve it over some rice and some greens and you’re good to go!

lettuce wraps are also a great way to eat this delicious mixture !!
