easiest meal prep EVER.

another simple recipe that you might not think about—roasting veggies for the week! set yourself up for success with this one. this is one of our favorite way to prepare for the week ahead is by meal-prepping. it ensures we’re getting our nutrients in and gives us time back during the week to focus on other things. my personal favorite thing to meal-prep is a big batch of veggies. roast them in the oven and then refrigerate them for the week. when you need them, just toss them in wherever you’re feeling it that day — alongside some ground beef, in a big salad, or over some rice.

INGREDIENTS

  • 1 sweet potato :: cubed

  • 1 crown of broccoli :: chopped

  • 1 onion (red or white) :: diced

  • 4 large carrots :: chopped

  • 6 celery stalks :: chopped

  • extra virgin olive oil (we love graza!)

  • lemon :: juiced

  • salt + pepper

INSTRUCTIONS

chop up all your veggies and lay them flat on your baking sheet

drizzle with olive oil, squeeze half a lemon over the top, and season with salt and pepper.

roast in the oven for 30min at 400*

once all your veggies are tender, take them out of your oven and let them cool.

add them to a tupperware and place in the fridge.

now you’re all set for veggie-packed meals this week!
