strawberry lemon blondies—perfect for valentine's day!

when we made these they were an instant hit! these strawberry lemon blondies are fairly simple to make and so moist, so dense, so good! they have little jammy bites throughout thanks to the freshly diced strawberries and jam added to them. the lemon flavor brightens up these bars, giving them a slight tang. these are truly the perfect pink dessert for your galentines/valentines celebration :)

INGREDIENTS

Blondies

1 cup unsalted butter (2 sticks or 1 whole package of kerrygold) : room temperature

3/4 c. golden monkfruit sweetener : we use this one

1 large egg : we recommend pasture-raised if they’re accessible to you

1/4 c. fresh sqeezed lemon juice

zest of 1 lemon

1 tbsp strawberry jam

2 1/4 c. (306 grams) all purpose flour : use the fluff/scoop/level method for measuring

1/2 tsp baking powder

1/2 salt

1 1/4 c. diced fresh strawberries

Glaze

1 c. powdered sugar

2 tbsp muddled strawberries

1 tbsp strawberry jam : we use this one

~1 tbsp lemon juice : potentially slightly more or less, just enough to thin the glaze

zest of 1/2 a lemon

INSTRUCTIONS

start by preheating your oven to 350ºF

line a 13x9” pan with parchment paper—make sure to let it line up the sides as well so you can easily remove the blondies from the pan.

add the butter and sugar to a bowl and cream until fluffy. once fluffy, beat in the egg.

once the egg is fully incorporated, beat in the lemon juice. it will likely not completely incorporate yet, but that’s ok.

in a separate bowl, whisk together the flour, baking powder, and salt. once whisked, add to the wet ingredients in your first bowl, mixing until no more dry flour is present. the dough will be thick.

gently fold in the diced strawberries, jam, and lemon zest. spread the mixture into your pan and spread out as evenly as possible to ensure even baking. because the dough is thick, take your time making it even.

bake for 40-50 minutes, just until it starts to turn golden around the edges and the center is set. check your blondies at 40 minutes with a toothpick inserted into the center—a toothpick will be moist but not wet. don’t overbake these, or they will dry out. once done, let cool on a rack.

cut off the tops of the strawberries and muddle them together—using about 4 strawberries. whisk together the sugar, jam, and lemon juice until no lumps remain. if your glaze is too thin, add a little more sugar. if it’s too thick, add more lemon juice.

once the blondies are cooled, spread the glaze over the top. let the glaze set before slicing.
